PINK OYSTER

High in protein, these mushrooms also contain fiber, potassium, copper, riboflavin, vitamin B6, folate and ergothioneine (antioxidant)
This brilliantly coloured oyster mushroom is ideal for sauteing, boiling, slow roasting or frying and due to its succulent meaty texture is a fantastic meat substitute in many dishes.
Add to stir fries, pasta, pilafs, pizza or soups to get that extra umami kick.
Pairs well with coriander, parsley, mint, basil, ginger or mix with cream based white sauces for added flavour.
Pink oysters require thorough cooking to develop their flavour and texture. (15-20 minutes). Coat them with olive oil or sesame oil and add your favourite herbs and spices.
Although these oysters lose their pink colour when cooked, this is replaced with golden brown hues.

GOLDEN OYSTER
pleurotus citrinopileatus, yellow oyster

Containing copper, zinc, and essential amino acids in varying amounts including folic acid, lovastatin, and carotenoids which also gives this mushroom its vivid yellow color.
This stunningly beautiful mushroom is best suited to stir frying, braising, boiling, or sautéing. Extremely versatile it pairs well with poultry, seafood, steak or excellent in vegan, and vegetarian dishes due to its broad range of flavours and texture. When sautéed in oil these mushrooms have a similar taste to roasted cashew nuts.
The yellow colour is lost on cooking but turns a golden brown hue.
Aware that these oysters are fragile post-harvest and lower yielding, this mushroom is a delicacy that always sells out quickly.

WHITE OYSTER
pleutus ostreatus var. florida, tree oyster
Summer strain. This particular strain grows well in tropical to subtropical conditions

Rich in protein, fiber, ash, carbohydrate, Calcium, Phosphorus, Potassium, and iron.
Producing beautiful clusters of creamy white, mushrooms, this oyster has a subtle sweet taste and a substantial meaty texture.
Recommended to tear into strips and sauté, but with its rich, meat like texture and umami flavour you can make a Stroganoff, cook as a risotto, mix with pasta, or simply enjoy on toast.
